Real Bread from freshly milled Flour
As you may have read in our story, we believe that God answered our prayers for better health by leading us to information about real bread made from freshly milled flour. The video that Liz stumbled upon (Only Real Bread- Staff of Life by Bread Beckers) was three hours long, but she just knew she had to watch it, and watch it she did. We now have a grain mill and many types of grains to bake with, and we look forward to sharing them with you!
Grains in their whole form are nonperishable and packed with fiber, vitamins, minerals, and antioxidants. However, most of these nutrients are stored in the bran and germ of the grain, which are both removed during the commercial milling process. The white flour you can purchase at the store is left with only the protein and starch (endosperm) of the grain. Although white flour is enriched, only a fraction of the nutrients that are stripped away with the bran and germ are replaced.
Once milled, flour from whole grains is perishable and the nutrients begin to oxidize. When baked with immediately, those nutrients are captured in the bread.
